Gem- Rocky Road

Road Rocky is a wonderfully simple treat, with digestive biscuits and marshmallows encased in chocolate. This recipe is perfect for a weekend activity and pairs really well with vanilla ice cream! It can also be changed to be less sweet by adding in walnuts, brazil nuts or raisins! 

Ingredients

  • 125g Butter
  • 400g Milk Chocolate (Can mix in dark chocolate if desired)
  • 45g Golden Syrup
  • 100 Digestive Biscuits, roughly crushed
  • 150g Mini Marshmallows
  • 50g White Chocolate 

 

Prep time: 15 Minutes 

Chill time: 2 Hours Minimum 

Total time: 2 Hours 15 Minutes 

Servings: 16 – 25

 

Method

  1. Add 350g of milk chocolate, butter and golden syrup to a heat proof bowl over boiling water. Melt everything together
  2. Once melted, add in the biscuits and marshmallows and mix until everything is coated in chocolate.
  3. Spoon the mix into a lined 8×8″ tin and spread evenly to fill the corners. Melt another 50g of milk chocolate and spoon this over the mix to fill any gaps at the top.
  4. When the mix is slightly chilled, melt the white chocolate and drizzle over the top. Place in the fridge and chill for at least 2 hours but preferably overnight.
  5. Cut into 16/25 equal portions.
  6. Enjoy!
