Gem- Banana Bread

This simple banana bread recipe can be enjoyed by the entire family. Kefir adds texture and a healthy twist to this delicious recipe and the choc chips are always a hit with kids of all ages!  

Ingredients

  • 190g Gem plain flour
  • 2 tsp Gem baking powder
  • 1/2 tsp bicarbonate of soda
  • Pinch of salt
  • 175g Gem caster sugar
  • 2 large eggs
  • 2 medium bananas, mashed
  • 150g thick kefir (or plain yoghurt)
  • 100g Gem milk chocolate chips
  • 1 tsp Gem icing sugar for dusting

 

Prep time: 20 mins
Bake time: 45-55 mins
Servings: 12-15 slices

 

Method

  1. Preheat the oven to 175C. Butter and flour a loaf tin or line it with baking paper.

  2. Mix the flour, baking powder, bicarbonate of soda and salt in a medium bowl.

  3. In a separate large bowl, beat the sugar and eggs together until pale and fluffy.

  4. Carefully stir in the mashed bananas, kefir, choc chips followed by the flour mixture.

  5. Pour it into the loaf tin and bake it for 45-55 mins or until a wooden stick inserted into the center comes out clean.

  6. Leave to cool in the tin then turn out and dust the top with some Gem icing sugar. Enjoy!

     

    Top Tips
    If you fancy, you can replace the 100g choc chips with 100g of Gem walnuts. Just chop them into small pieces and add them to the mixture instead of the choc chips.
